When everything runs smoothly in a restaurant, there is usually a good restaurant manager behind it. They are host, team leader and organiser in one, making this one of the most important roles in hospitality. Restaurants and hotels in Germany are constantly looking for experienced service leaders.
What does a restaurant manager do?
- Hosting: welcoming guests, looking after regulars and resolving complaints confidently
- Leadership: rotas, onboarding, motivating and training the service team
- Organisation: reservations, table planning and coordination with the kitchen
- Quality: setting and checking service standards
- Numbers: tracking sales, staff costs, cash-up and orders
- Events: planning parties, groups and special occasions
Requirements
Most employers expect hospitality training and several years of service experience, ideally as chef de rang or assistant restaurant manager. Leadership, organisation and communication skills are central. Very good German is usually required because you deal with guests, suppliers and management. Additional languages are a clear advantage.

Restaurant managers earn considerably more than service staff. Pay depends on the size of the business, the region and the scope of responsibility. In hotels with several outlets the role often leads to further promotion. A share of tips, staff meals and supplements are common extras.
Career path
The typical route runs from commis de rang, waiter and chef de rang to assistant restaurant manager and then restaurant manager. After that, roles such as F&B manager, operations manager or hotel director are possible. Further qualifications such as the German Hotelfachwirt or Restaurantmeister support promotion.
