Germans love international food. Alongside Italian restaurants, Asian restaurants – Japanese, Chinese, Vietnamese, Thai, Korean and Indian – are among the most popular places to eat. That creates strong demand for cooks experienced in international cuisine.
What makes the work special?
International kitchens use their own techniques, ingredients and equipment: woks at very high heat, steamer baskets for dim sum, broths simmered for hours for ramen or pho, tandoor ovens for Indian breads. Mastering these techniques is valuable specialist knowledge that not every cook has.
Typical duties
- Preparing broths, sauces, pastes and marinades
- Working at the wok, grill or steaming station
- Making dumplings, noodles or sushi
- Portioning and plating to recipe
- Following hygiene rules, especially for raw fish and seafood
- Working with kitchen helpers and training new colleagues
What experience is expected?
Most restaurants look for cooks with experience in the relevant cuisine. But classically trained cooks with curiosity and willingness to learn also have a chance, because basic techniques such as cutting, cooking and seasoning are the same everywhere. Speed matters, since many international restaurants have high turnover and a large delivery business.
Working conditions
Asian and international restaurants often have long opening hours with lunch and dinner service. Many offer full-time positions, staff meals and sometimes accommodation. Make sure you get a written contract with clear hours and correctly recorded time.
Career prospects
With experience you can become station leader, sous chef or head chef in an international restaurant. Hotels also look for cooks with Asian know-how, for example for breakfast buffets with international guests or in-house speciality restaurants.
