Germany has thousands of pizzerias – from small delivery services to family trattorias and large Italian restaurants. Most of them use gas or electric ovens, so demand for pizza makers and pizza assistants is high. For many people this is the ideal way into hospitality.
Gas and electric ovens compared
- Gas oven: heats up quickly, reaches high temperatures and comes close to a wood-fired result. You need to watch the flame and turn the pizza.
- Electric oven: even, easily controlled heat, often with several decks. Ideal for delivery and high-volume businesses.
- Conveyor and deck ovens: common in chain restaurants, highly standardised and easy to learn.
An experienced pizza maker adjusts dough, baking time and toppings to each oven. Knowing the differences lets you work flexibly in different businesses.

Duties of a pizza assistant
The pizza assistant supports the pizza maker so that things keep moving when the restaurant is full. They prepare ingredients, restock the topping station, portion dough, cut and box finished pizzas and keep the station clean. Over time they learn to stretch and bake – many pizza assistants become pizza makers themselves after a few months.
What do you need to get started?
As a pizza assistant you do not need formal training. Speed, cleanliness and willingness to learn are what matter. For a pizza maker position you should already have experience and be able to make dough independently. Italian helps but is not required. In Germany, anyone working with food needs a hygiene instruction under the Infection Protection Act – your employer will explain how to get it.
Daily work and conditions
Pizzerias are busiest at lunchtime and above all in the evening. Many offer fixed shifts, one or two days off a week and staff meals. Especially in smaller towns, employers often provide accommodation. Make sure you have a written contract and that all your hours are recorded correctly.
