A good bar lives by its bartenders. They mix cocktails, recommend spirits and create an atmosphere where guests want to stay. In Germany, hotel bars, cocktail bars, restaurants and event venues are constantly looking for experienced bartenders and motivated bar assistants.
What does a bartender do?
- Preparing cocktails, long drinks, aperitifs and alcohol-free drinks
- Serving beer, wine and coffee specialities
- Advising guests on spirits and signature drinks
- Mise en place: cutting fruit, making syrups, preparing ice and garnishes
- Stock control, ordering and stocktaking
- Taking payments and cashing up
- Keeping the counter, glasses and equipment clean
What does a bar assistant do?
The bar assistant (barback) supports the bartender behind the scenes: restocking ice, glasses and drinks, washing glasses, preparing garnishes and keeping the bar clean. Many bartenders started exactly this way – as a barback you learn recipes, routines and speed first-hand.
Hotel bar or cocktail bar?
At a hotel bar, classic service is the focus: international guests, business travellers, an elegant atmosphere and often snacks or room service. Cocktail bars are all about creative drinks, speed and entertainment, especially at weekends. Both have their appeal, and experience from one is welcome in the other.
What do employers expect?
- Bar experience and knowledge of classic cocktails
- Fast, clean work even when the bar is full
- A friendly, communicative personality
- German and/or English for guest communication
- Responsible handling of alcohol and youth protection rules
For bar assistants, motivation and willingness to learn are often enough.
Working hours and pay
Bartenders mainly work evenings, nights and weekends. In return there are statutory supplements for night work, Sundays and public holidays. Tips are often an important part of income at the bar. Base pay depends on experience, location and type of bar.
