What makes a wood-fired pizzaiolo special?
The wood-fired oven is the supreme discipline among pizza ovens. It reaches very high temperatures, a pizza is ready in one to two minutes and the heat is not the same everywhere inside. A good pizzaiolo has to read the fire, turn the pizza at the right moment and add wood so the temperature stays stable all evening.
Typical duties
- Making the dough: dosing flour, water, salt and yeast correctly, kneading and resting
- Dough management: planning proofing, portioning dough balls and using them at the right time
- Stretching by hand: a thin, even base without a rolling pin and an airy crust
- Topping: following recipes quickly and cleanly
- Running the oven: lighting the fire, holding the temperature, launching, turning and removing pizzas
- Hygiene and order at the station and preparing ingredients
What employers require
For a wood-fired oven position, experience as a pizza maker is usually expected. Many employers ask specifically for experience with Neapolitan pizza or a particular dough style. Speed matters: on a busy Friday night dozens of pizzas an hour have to come out of the oven. Italian is an advantage in many pizzerias, and German helps with guests and colleagues.
Wood, gas or electric oven?
Many pizzerias now use gas or electric ovens because they are easier to operate. Anyone who can handle a wood-fired oven can usually work with other ovens too – the opposite is harder. That is why pizza makers with wood-fired experience are in particularly high demand and have a strong position in salary negotiations.
Working conditions
Pizzerias are busiest in the evenings and at weekends. Many employers offer full-time positions with fixed days off, staff meals and often accommodation near the restaurant. Pay depends on experience, region and the size of the business. Before you start, clarify how many hours per week are planned and how overtime is paid.
