A restaurant visit lives or dies by its service. Guests often remember a warm welcome, a good recommendation and attentive service longer than the food itself. That is why waiters and waitresses are in high demand in Germany – in restaurants, hotels, cafés and beer gardens.
What does a waiter do?
- Greeting and seating guests and presenting the menu
- Recommending food and drinks and taking orders, often on a POS system
- Serving food and drinks according to service standards
- Checking that everything is fine and responding to requests
- Taking payment and saying goodbye to guests
- Setting, clearing and preparing the station (service mise en place)
Service positions
- Commis de rang / busboy: entry level, helps set, clear and serve
- Waiter / waitress: looks after tables independently
- Chef de rang: responsible for a station in a fine-dining restaurant
- Restaurant manager: leads the service team and organises the floor
What do employers expect?
Formal restaurant training is a plus, but many employers also hire career changers. Friendliness, a neat appearance, good manners and resilience are what count. Because you speak directly with guests, German is more important in service than in the kitchen. Italian is a big advantage in Italian restaurants and English is often useful in hotels.
Tips and earnings
Tipping is common in Germany, usually five to ten percent of the bill. Tips are paid on top of your salary and can noticeably increase your income, especially in busy restaurants. The base salary depends on experience, region and the business. Ask during the interview how tips are shared within the team.
Working hours
Restaurants are busiest at lunchtime, in the evening and at weekends. Many use split shifts or fixed shifts. In return you get days off during the week, supplements for Sundays and public holidays and usually staff meals.
Tips for success in service
- Learn the menu by heart and taste the dishes – your recommendations will be more convincing.
- Carry three plates safely: a basic technique employers value.
- Stay calm and friendly even under pressure.
- Learn some wine basics – it increases sales and tips.
