The big advantage: predictable hours
Breakfast shifts start early, usually between 5 and 6 a.m. In return the working day often ends by late morning or early afternoon. Evenings and afternoons stay free – ideal for families, people with a second job or anyone who prefers not to work late into the night.
Duties of a breakfast cook
- Preparing hot dishes: scrambled and fried eggs, omelettes to order, bacon, sausages
- Setting up and refilling the buffet with cold cuts, cheese, fruit, yoghurt and cereals
- Baking rolls and breakfast pastries, often from prepared dough
- Checking temperatures and use-by dates according to HACCP
- Ordering and preparing for the next day

What is expected?
No formal training is needed for breakfast service. Friendliness, a neat appearance and punctuality matter most – when you open at 6 a.m., the team needs to rely on you. Kitchen experience is an advantage for breakfast cooks, but good on-the-job training is often enough. English is helpful in international hotels because many guests come from abroad.
Large hotels, city hotels and holiday hotels
Large city hotels serve hundreds of guests every morning, so speed is key. In smaller hotels and guesthouses one person often handles both kitchen and service. Holiday hotels often offer seasonal contracts with accommodation and meals – an ideal way to start working in Germany.
Career after breakfast
Many people start in breakfast service and later move to restaurant or banqueting service, reception, or take on responsibility for a team as breakfast supervisor. Those who start as breakfast cooks can progress to commis chef or cook.
