Fresh croissants for breakfast, an elegant dessert in the restaurant, a festive cake at a banquet: behind all of this are pastry chefs. Their craft combines precision with creativity and is in high demand in Germany. Hotels, restaurants, cafés and bakeries are constantly looking for specialists in desserts and baked goods.
Konditor or pastry chef – what is the difference?
In Germany, Konditor is a recognised training profession. Konditoren often work in patisseries, cafés and bakeries, making cakes, gâteaux, pralines and fine pastries. The pastry chef (pâtissier), on the other hand, is the station in the kitchen brigade responsible for desserts, breakfast pastries and banquet sweets in hotels and restaurants. In practice the two areas overlap a lot.

What do employers expect?
Employers look for completed training as a pastry chef, baker or cook with a pastry focus, or an equivalent qualification from abroad. Precision is essential, because in pastry every gram counts. A good eye for presentation, patience and the ability to produce large quantities in consistent quality are just as important.
Working hours and conditions
Pastry chefs in hotels and bakeries often start very early so breakfast pastries are fresh. In return the shift usually ends in the early afternoon – an advantage over many other hospitality jobs. In restaurants the work tends to be in the afternoon and evening. Many employers offer staff meals, supplements and accommodation if needed.
Application tips
- Put together a small portfolio with photos of your cakes, desserts and pastries.
- List the techniques you master: tempering chocolate, sugar work, laminating dough.
- Mention any experience with large volumes (banquets, buffets).
